2 pounds lean ground beef, pork, or lamb
4 cups red chunky salsa(The Mexican general term for any variety of highly seasoned sauces, uncooked or cooked, that are especially popular in Mexican cooking. Salsas generally are chunky in texture and almost always contain chili peppers.
2 -15-ounce cans red kidney beans rinsed and drained.
In a 12-inch skillet cook ground beef, pork, or lamb until meat is brown; drain off any fat. Drain well on paper towels; return meat to skillet. Stir in red chunky salsa and red kidney beans. Divide into four 2-cup portions in freezer containers. Use immediately or seal, label, and freeze up to 1 month.
Use as needed, thawing first. To thaw one frozen 2-cup portion in your microwave oven, transfer to a microwave-safe bowl and heat on 70 percent power (medium-high) or in the refrigerator, remove one portion from the freezer and let stand overnight in the refrigerator. Makes about 8 cups.
2 tablespoons fresh jalapeno, serrano, or Anaheim pepper, finely chopped.
In a medium mixing bowl stir together fruit, sweet pepper, green onions, cilantro or parsley, lime juice or lemon juice, and jalapeno, serrano, or Anaheim pepper. Cover; chill at least 2 hours before serving.
Serve as a dip for chips or fresh vegetables or as a condiment for tacos, quesadillas, burgers, steaks, chicken or fish. Makes about 2 cups.
Make-Ahead Tip: Spoon the salsa into a storage container. Cover and chill for up to 2 days.
