Power food recipe - Lean meat
Chicken rice casserole: American and Indian style
Power food recipe - Lean meat 8 2 tablespoons butter or vegetable oil
8 1 medium onion, peeled and diced
8 3 cups skinned, diced and cooked chicken
8 2 (14 1/2-ounce) cans drained and rinsed or 100gms diced green beans,
8 1 (8-ounce) can water chestnuts or cashew nut 10gms chopped
8 1 (10 3/4-ounce) can condensed cream of chicken or celery soup
8 1 cup mayonnaise
8 1 (6-ounce) box long-grain wild rice (600gms rice), cooked according to package directions
8 1 cup grated sharp Cheddar cheese or grated paneer. Add Pinch of salt

Preheat oven to 350 degrees F or a rice cooker with required water.

Heat butter or oil in a small skillet over medium heat. Add onion and saute until translucent, about 5 minutes. (Add ginger garlic paste with garam masala powder if you like the spicy taste and fry till brown) Remove from heat and transfer to a large bowl.

Add all remaining ingredients to bowl and mix together until thoroughly combined.

Pour into a greased 3-quart casserole dish. Bake for 20 to 25 minutes or until bubbly or pour into the rice cooker and cook for twenty to thirty minutes. Let stand for a few minutes before serving.

Here are some general tips about a beauty diet with SUPERFOODS:
  • Vegetables: You should have three to five servings of vegetables daily. Include one serving of raw, leafy greens.
  • Do not have more than three-ounce servings a day. Take off all the fat. Try to include two servings of turkey or chicken and a serving of fish a day is ideal.
  • Fruits: Have two to three servings everyday. 1/2 cup of chopped or sliced fruit is one serving.
  • Dairy: Have at least two servings daily. One serving is eight ounces of milk or yogurt.
  • Fats: Salad dressing, cooking oil, butter and mayonnaise should be limited to two servings a day.
Eat these foods for beauty and follow the beauty diet and you will notice that over a short period of time you are looking better than you did before.

Mumbai Marinated Fish Steaks

Mumbai Marinated Fish Steaks Pomfret is another popular fish eaten barbecued, stuffed, fried or curried among the Mumbaites.

Taste Pomfret fried and crisp with India4U. Crispy Fried fish with dal & rice is often a great & comforting meal in an Indian home. Occasionally, promfrets stuffed with green masala or ground shrimps and fried is a welcome change to tickle your taste buds.!

So here it is, fried all crisp..
8 1 medium to large sized promfret, cleaned well by removing all the internal inedible stuff
8 3 - 4 tbsp rava (semolina)
8 2 - 3 tbsp oil, for frying
8 1 lemon, cut into wedges

For Marinate :
8 1 tsp tandoori masala powder
8 1/2 tsp red chilli powder
8 1/4 tsp turmeric powder
8 1/2 tsp cumin powder
8 1/2 tsp corainder powder
8 Salt, to taste
8 3 cloves garlic, ground to a paste
8 1/2 inch ginger piece, ground to a paste
8 1 tbsp vinegar

Wash the promfret well. Make gashes on both sides of the promfret for the marinade to seep

In a small bowl, mix all the ingredients for the marinade. Apply marinade to the promfret, rubbing well into the gashes & inside the promfret. Set aside to marinate in the refrigerator for atleast an hour.

Heat a heavy bottomed pan on medium flame. Pour oil into the hot pan.

Coat the promfret with semolina (rava) & place it on the hot pan. Let it fry undisturbed on medium flame for 10 minutes. Flip & turn over the promfret on the other side. Let it fry for 10 minutes more.

Serve hot with lemon wedges.

Promfrets are not available everywhere in the US. You would only find them at local chinese markets. Last week, I was lucky to find a chinese market on my trip to Jersey.

So not looking for a second chance, I just hopped into the market & bought 2 beautiful large sized promfrets. I just could'nt wait to get back home & fry it up.

Pomfret steaks can also be bought and marinated with the same ingredients and fried, barbecued, grilled or cooked in a microwave. You are sure to experience a surefire taste that is sure to stay for a long, long time in your mouth and in your memories.

Discovers Bordi and Manori, two little villages nestled beside the Mumbai-Ahmedabad highway with India4U There are a couple of places around Mumbai that can be visited in a day and Bordi is one of them.

If you just want some peace and quiet, want to curl up with a good book and spend some time in introspection, then Bordi the place for you.

Towards north of Mumbai lies Bordi, a quiet seaside resort fringed by casuarinas. This is an idyllic little village situated about 3-4 hours away on the Mumbai - Ahmedabad highway.

The Dahanu-Bordi beach stretches across approx. 17kms. The area is famous for its chikoo and other fruit orchards.

You can also visit Udvada, where the sacred flame of the Zoroastrians is kept burning. Bordi is also known for its boarding schools.

Driving to Bordi is the best option. Check out on the condition of the national highway.

Bordi does have a gentle, soothing everydayness to its earthy charm. It feels exactly like home but yet different. It does away with your cares and worries.

You've only to look at the salubrious green fields in the midst of which sit two-storey bungalows, with gardens overflowing with flora of all type.

The ideal way to sit back and enjoy this place is to stay with the locals or to invest in a farmhouse of your own! The perks are plenty. The soil is fertile enough for you to grow your own greens, potatoes, garlic, spring onions, bhindi (ladyfingers), mangoes, chikoos and great bunches of green bananas. The seafood available is mouthwateringly fresh.

If you leave around 7.00 am then you could be there around 11.00 am (depending on how fast you drive). Stopping for breakfast en route is a good idea. Nothing like the taste of country eggs and richly buttered warm bread, adhrak (ginger) tea or coffee, which actually has the taste of fresh milk in it rather than the diluted version we have in the city. On the way to Bordi is Manori. It has a river running through the village, which irrigates the land. Manori is another quaint hamlet with great bushels of chikoos growing everywhere.

By the time you reach Bordi, it's lunchtime and if you are lucky enough to be staying in a bed and breakfast, then they really will put up a spread for you.

Getting There:
By Air: Nearest airport is Mumbai, 145 kms.
By Rail: Nearest railhead is Gholwad, 2 kms. Also accessible from Dahanu Rly. Station, 15 kms.
By Road: Mumbai - Bordi, 145 kms. Dahanu-Bordi 15 kms.
State Transport buses ply between Dahanu Road and Bordi.

Accommodation:
Self contained rooms- 4 Nos.(2 beds each) and Dormitory (1 block, 10 beds) Tents.
(Except during monsoon)

Check-out Time: 9.00 a.m.

Reservation: Mumbai.
