1 1/2 cups Peas (boiled)
1 Ginger (peeled and sliced)
1 tspn Chaat masala
1/2 lime
5-6 tspns Oil
2-3 Green chilies (finely chopped)
Salt to taste
Shallow fry the cubed potatoes till brown. Fry ginger lightly in the remaining oil.
Add peas and fry for a minute. Add green chilies, limejuice and salt.
Garnish with fresh coriander.

1 tblspn Chili sauce
2 tblspns Tomato sauce
4-5 Green chilies (slit)
4-5 flakes Garlic (crushed)
1/4 tspn Sugar

Make a batter with just enough water to coat the paneer with. Cut the
paneer into 1/2 strips. Dip in the batter and fry a golden brown colour.
Heat 2 tblspns oil, fry green chilies and garlic for 1/2 a minute. Lower heat.
Add salt, pepper and sugar. Add soya chili and tomato sauces.
Add 2 tblspns of water. Add paneer, mix well.
Garnish with coriander.

1 cup Carrot (grated)
1 cup Cabbage (grated)
1 Onion (finely sliced)
1/2 cup Capsicum (sliced)
1 cup Sweet corn
2 Green chilies (finely chopped)
1/2 tspn Mustard pwd
1 tspn Salt
1 tspn Limejuice
1 tspn Sugar
1/2 tspn Pepper pwd
Cut the edges of the bread slices. Roll the bread with a rolling pin taking care to
flatten and not break. Heat oil in a pan, add vegetables and stir for 2 minutes.
Add sweet corn and all the other ingredients. Mix well. Spread mixture
generously on a rolled out bread. Roll tightly to make a roll. Cut into half.
Place on a plate. Bake in a hot oven for 10 minutes.

1/2 cup Gram flour
2 cups cooked rice
2 Green chilies (chopped)
1/2 cup Onion (chopped)
1/2 Cheese (grated)
1/2 cup Peas (boiled)

Mix well all the ingredients with some water. Heat oil to fry. With a spoon drop batter
in oil. Fry pakoras a golden brown colour.
Serve hot.

Corn flour ¾ cup
Plain Flour ¾ cup
Sugar 1 tspn
Salt 1 tspn
Vinegar 1 tspn
Soy sauce 1 tspn
Pepper pwd 1 tspn
Ginger paste 1 tspn 
Garlic chopped 1 tspn
Green chilli chopped 1 tspn
Celery chopped 1 tbspn
Spring Onions 2 tbspns
Oil to fry
Mix corn flour and plain flour. Add water and mix well. Add all the ingredients and beat well together.
Add corn and marinate for 1 hour at least
Heat oil in a fry and deep fry, dropping one corn at a time.
Don’t fry for too long as the corn loses its crispiness.

Rice ½ cup soaked for 2 hours
Urad Dal 1 cup soaked for 2 hours
Spinach 1 cup shredded
Cabbage 1 cup shredded.
Green chilies 3 chopped
Onions 2 chopped
Salt to taste
Oil to fry
Grind the dal and rice together with minimum amount of water.
Mix all the ingredients into this paste
Drop into hot oil in the shape of vadas.
Fry to a golden brown color.

Mushroom 20 – 25 large button mushrooms
Butter 2 tbspns 
Cheese 2 tbspns grated
Green chilli 2 chopped Onion 1 chopped
Spinach 4 cups chopped
Milk 2 cups
Plain Flour 2 tbspns
Butter 1 tbspn
Salt to taste
Wash the mushrooms. Remove the stem.
Heat butter and fry onion, add the green chilli and fry again for ½ a minute.
Add spinach and cook for 2 mins.
Mix milk to the flour and add to the spinach mixture.
Keep stirring till it thickens. Add salt.
Stuff mushrooms with this. Add butter to a pan and lightly cook mushrooms.
Top with grated cheese and serve.

Bread 8 slices
Cheese grated 1-½ cups
Onion 1 chopped
Capsicum 1 chopped
Green chilli 2 chopped
 Mix the cheese, capsicum, onions and green chilli in a bowl. Mix well.
Divide the mixture into 8 equal portions.
Toast the bread on a tava on one side.
On the undone side spread the cheese mixture and grill.
The oven should be preheated at 180 degrees.
Grill till the cheese melts and turns golden brown.
